Traditional Challah breads every Friday at Flyin g Squirrel in Talkeetna Most days breads are out of the oven by 10:00am. Sometimes breads are gone by 1pm - feel free to call and reserve something if you can't make it in earlier in the day. Purchases of more than a few loaves are welcome, but we can better accomodate larger orders with at least 24 hours notice. Scroll down for descriptions and ingredients.

SATURDAY - Olive Oil Baguettes • Cheese Filled Bread • Spent Grain

CHEESE FILLED BREADS - 1 lb.
Made with the same dough as the Olive Oil Baguette, cheese filled breads are stuffed with a mixture of cheese and veggies for a mini meal in itself. Each week the filling is different. Unbleached white flour, sourdough starter, olive oil, canola oil, salt, yeast, well water.

EIGHT GRAIN BOULE - 2 lb.
“Boule” is the shape – a round or bowl shaped hearty bread full of grains and seeds: unbleached white flour, organic whole wheat flour, oats, millet, quinoa, barley, cracked wheat, cornmeal, sesame seeds, poppy seeds, and sunflower seeds, honey, yeast, salt, well water.

LIGHT WHEAT CHALLAH - 2 lb.
This traditional Jewish sabbath bread is enriched with egg and honey. It’s lightly sweet, very rich and makes the best French toast! We put a little whole wheat flour, buttermilk and butter in it for extra all around goodness: unbleached white flour, organic whole wheat flour, buttermilk, eggs, butter, honey, sugar, yeast, salt, well water.

LIGHT WHEAT CIABATTA - 1 ¼ lb.
The best kept secret in bread making is Ciabatta. The name means “slipper” in Italian and represents the shoe shape of this rustic, crusty, chewy, flavorful loaf. Ciabatta keeps well and is great for dipping in sauces and soups because of those trademark big uneven open holes in the crumb: unbleached white flour, organic whole wheat flour, sourdough starter, milk, olive oil, yeast, salt, well water.

MOLASSES MULTIGRAIN SANDWICH LOAF - 2  lb.
A wholesome everyday sandwich bread with a dark crust and just the right combination of soft crumb alongside whole grain crunchiness: unbleached white flour, organic whole wheat flour, rye flour, millet, cornmeal, flax seeds, sesame seeds, molasses, canola oil, yeast, salt, well water.

OLIVE-HERB FOUGASSE - 1 1/4 lb.
Impressive looking flat bread with lots of olive oil brushed crust and great full salty flavor: unbleached white flour, sourdough starter, olive oil, canola oil, salt, kalamata olives, rosemary, oregano, yeast, well water.

OLIVE OIL BAGUETTES - 1 lb.
The only white bread you’ll find at Flying Squirrel! A softer crusted classic baguette shape that’s brushed with extra virgin olive oil: unbleached white flour, sourdough starter, olive oil, canola oil, salt, yeast, well water.

SPENT GRAIN BATARD - 2 lb.
We love to call this what it really is: recycled bread! Using barley grains that have already been used once by Denali Brewing Company to brew beer, we make a fully flavored, great textured large loaf (a batard is a shorter, wider shape than a baguette - good for sandwiches) that’s got a formidable crust and moist, almost fluffy interior: unbleached white flour, organic whole wheat flour, rye flour, whole spent barley grain, barley malt, sourdough starter, yeast, salt, well water.

SUNFLOWER RYE  - 1 ¾ lb.
Pungent rye flavor is distinctive in this bread and it’s tender inside, dark from molasses and has just a little sunflower seed crunch. This rye has no onion or caraway. Unbleached white flour, organic whole wheat flour, rye flour, molasses, sunflower seeds, canola oil, sourdough starter, yeast, salt, well water.

WHOLE WHEAT BAGUETTES - 1 ¼ lb.
Who ever heard of a whole wheat baguette?! Combine the classic French baguette qualities of the long shape, the crunchy crust and the soft interior with a simple whole wheat peasant bread and voila! Unbleached white flour, organic whole wheat flour, molasses, yeast, salt, well water.

WHOLE WHEAT PITA
Made from the same dough as the Whole Wheat Baguette, these middle eastern pitas puff up in the hot oven like a balloon and make a great soft sandwich pocket when cut in half or for dipping in soups or hummus. Unbleached white flour, organic whole wheat flour, molasses, yeast, salt, well water.

GLUTEN FREE BREAD – 1 ½ lb. free form, oblong loaf
First Friday of the Month – pre-order only before Thursday at 12pm. Ingredients: Brown rice flour, millet flour, tapioca flour, arrowroot, ground flax, xanthan gum, cider vinegar, eggs, olive oil, honey, yeast, salt, well water.
